Ivey Bacon Beardslee passed away on Sunday, June 21, 2009 in the home where she had lived much of her life. With the strength and assistance of her family and friends, Ivey built the Pembroke Telephone Company into a world-class, modern telecommunications company.

Ivey was the president of the Hank Locklin fan club and was been friends with Hank for years. For those of you not familiar with Hank, he was one of country music's most celebrated vocalists. Please take a minute to visit his site. He released a CD entitled "By The Grace of God: The Gospel Album" shortly before his death, just a few months before Ivey's.

For the few who do not already know, Ivey was a terrific cook! A few years ago, everyone at the phone company got together and assembled a cookbook with many of Ivey’s favorite recipes and those of her friends. Copies of the cookbook are available for sale at the phone company for just $5 each, with proceeds benefiting local charities.


  Easy Chicken Pot Pie

2 c. Diced Chicken (Cooked)
4 Boiled Eggs (Chopped)
2 cans Mix Vegetables
2 cans Cream of Chicken Soup
1 can Chicken Broth
1 c. Sweet Milk
1 c. Mayonnaise
1 c. Self Rising Flour

Boil the chicken, let it cool, then de-bone the chicken;
set aside.
Mix eggs, vegetables, cream of chicken, and broth together,
and then toss in chicken. Place ingredients in a baking dish.
In a bowl combine the milk, mayonnaise, and flour.
Pour over chicken mixture and bake for 30 minutes
at 350 degrees.
